
Khao Soi Gai – Northern Thai Chicken Noodles Curry Soup

Ingredients
- 2 pcs Mi Urai
- 2pcs Chicken Breast Fillets (@120-150 g)
- Khao Soi paste:
- 4 cloves garlic
- 5 red onion
- 1 stalks lemongrass, chopped
- ½ inch galangal
- ½ inch ginger
- 4-5 dried chillis (soaked)
- ½ inch turmeric
- ½ tsp cumin powder
- ½ tsp coriander powder
- 1 tbsp shrimp paste
- Water as needed
- Khao Soi soup
- 3 tbsp cooking oil
- 800 ml water
- 200 ml coconut milk
- Salt, Pepper, Sugar
- Topping, as needed
- spring onion, sliced
- red chilli, sliced
- Lime, cut into wedges
Instructions
- 1. Cook Mi Urai according to instructions on pack. Set aside.
- 2. Make Khao Soi Paste: blend paste ingredients until smooth. Set aside.
- 3. Make Soup: sauté blended paste until fragrant. Add chicken breasts, water, and coconut milk, stir well. Add seasoning and cook until chicken is fully done, then remove chicken from the pot.
- 4. Pan-sear the chicken to create a light brown color, then slice it.
- 5. Place Mi Urai in a bowl, ladle the Khao Soi soup over them, add chicken sliced, and top with topping as needed.
