Ingredients
- 2 pcs Bihun URAI
- 300 ml coconut milk
- ½ tsp salt
- 3 sheets pandan leaves
- 125 g sugar
- Pandan paste, as needed
- 75 g tapioca flour
- Shredded coconut as needed, for serving
Instructions
- 1. Cook Bihun URAI according to instructions on pack. Set aside.
- 2. Boil coconut milk, salt, pandan leaves, sugar and pandan paste while constantly stirred until simmered.
- 3. In a bowl, add tapioca flour. Pour coconut milk mixture slowly into tapioca flour, stir well. Put back into the pot, cook until thickened.
- 4. Add Bihun URAI, cook until liquid is reduced and the mixture becomes a dough.
- 5. Brush oil evenly in an 18x18 cm baking pan. Put dough into the pan, make sure to even out the dough within the pan.
- 6. Cut wajik into squares and serve with shredded coconut.
