Healthy Prawn Noodles Salad

Ingredients
- 2 pieces Mi Urai premium egg noodles, cooked and tossed in a little oil
- 1 large tomato, seeded and diced
- 1 cucumber, seeded and diced
- 4 lettuce leaves, sliced
- 1 tbsp coriander leaves, chopped
- lemon slices for garnish
- Prawns:
- 16 large prawns, peeled with tails on
- juice of 1 lime
- salt (to taste)
- pepper (to taste)
- Dressing:
- 1 clove garlic, minced
- 1 small shallot, minced
- 1/2 red bell pepper, seeded and diced
- 4 tbsp extra virgin olive oil
- 4 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp sugar
- salt (to taste)
- pepper (to taste)
Instructions
- 1. Marinate the prawns with the lime juice, salt and pepper; set aside.
- 2. Mix all of the dressing ingredients; set aside.
- 3. Cook the marinated prawns in boiling water; remove and immerse in ice cold water for a few minutes to chill. Drain and set aside.
- 4. Make the noodle salad – Mix the Mi Urai, tomato, cucumber, lettuce and coriander leaves. Add the dressing and mix well; divide among 8 cocktail glasses.
- 5. Top each glass with 2 prawns and garnish with a slice of lemon. Serve immediately.
- 6. Tips: Avoid the inner white portion of the rind when zesting the lemon; it imparts a bitter taste to the dish.
